FDA warns fermented cabbage maker about pathogen risks, labeling violations

As part of its enforcement activities, the Food and Drug Administration sends warning letters to entities under its jurisdiction. Some letters are not posted for public view until weeks or months after they are sent. Business owners have 15 days to respond to FDA warning letters. Warning letters often are not issued until companies have been given months or years to correct problems. Portions of the letters are often redacted from public view.

The Food and Drug Administration has issued a warning letter to a San Francisco food manufacturer after inspectors found deficiencies in its food safety plan, sanitation procedures and controls for refrigerated, ready-to-eat fermented cabbage products. The agency also cited labeling violations involving the company’s Russian-style kvas drink, sour cabbage and half-sour pickles.
