Watermelon Feta Mint Salad

THE Summer Salad of my dreams

I have been making this salad for YEARS and I’m not sure why I’m just now getting around to putting it on the blog. Better late than never, right?

Growing up, my grandmother always put salt on her watermelon and I thought it was so WEIRD but I’m now realizing that this is my own version of salting my watermelon LOL.

So, if you’re someone who loves a good salty bite with your watermelon, this one is for YOU and I have no doubt that you will really love it!

Here’s why you need this recipe:

It’s salty and sweet – I had to reiterate this one because I really do love the saltiness of the feta with the sweetness of the watermelon!

It’s a great way to use up summer produce – I’m bad about buying a BIG watermelon and then only eating half of it.

It’s SO easy to make – Toss it all together in a big bowl and you have yourself the best summer salad ever.

It keeps well for a few days – I’ve made this for meal prep and then eaten on it over the week and it’s always SO good. I do suggest adding the feta right before serving.

It’s the perfect summer party dish!

Ingredients we’re working with

The full written recipe is down in the recipe card but lets go over the main ingredients!

Watermelon – I like to get one of those individual seedless watermelons for this. They’re usually around 4-5 pounds and are perfect for this recipe.

Mint – I always have this growing like a weed in my yard every summer! It can be replaced with basil as desired.

Feta – Other salty cheeses could be used here but the feta is SO GOOD with the watermelon!

Cucumber – truthfully, I don’t always add cucumber to my watermelon salad but I really love it. You can leave it out as desired.

Red Onion – this adds such a lovely crisp crunch to the salad. Other onions would also work well.

Olive oil + vinegar – the base of the simple dressing we’re using on this salad.

What to serve with Watermelon Salad

Honestly, I really love this salad on it’s own BUT I do understand that this alone doesn’t make a meal 🙂 I made this recently to go with my Garlic Butter Tofu and it was all so good together! It would also be lovely with my Veggie Burgers or these Portobello Burgers!

Watermelon Feta Mint Salad

This Watermelon Feta Mint Salad is SO simple to make and comes together in just about 10 minutes! It’s everything you love about summer and the saltiness from the feta pairs SO well with the watermelon and cucumber.

I have no doubt that you’ll be making this one on repeat!

Ingredients

1 small Watermelon about 4 pounds, cubed1 medium English cucumber diced½ small red onion thinly sliced cup fresh mint chopped2 tablespoons olive oil1 ½ tablespoons red wine vinegar¼ teaspoon black pepper cup feta crumbledBalsamic glaze for drizzlingOptionals for topping: more mint and feta

Instructions

In a large bowl, toss together the watermelon, cucumber, red onion, and mint.
In a small measuring cup or bowl, whisk together the dressing ingredients until well combined: olive oil, vinegar, and black pepper.
Pour the dressing over the salad and toss to coat. Sprinkle the feta over top and serve with balsamic glaze + additional mint and feta as desired. ENJOY!

Notes

If you’re making this in advance, I suggest leaving the feta off until ready to serve. If you want it super fresh, you can also wait to toss the dressing on until right before eating.
