The Italian buffalo-milk dairy industry has cemented its status as a standout segment within the country’s agri-food sector, posting robust expansion in the first half of 2025. A report by NielsenIQ, commissioned by Fattorie Garofalo, reveals a striking 26% volume increase for buffalo ricotta—far outpacing the broader category’s modest 1.8% rise.
Buffalo mozzarella also delivered strong gains, growing 12% compared to a 2.5% rise for mixed varieties, while buffalo burrata climbed 10.3%, outperforming the overall category’s 5.6% growth. Collectively, fresh buffalo-milk cheeses achieved a 12% increase in both volume and value, with average prices holding steady—signalling sustained demand and a solid market position.
100% BUFFALO-MILK STRACCIATELLA: INNOVATION DRIVING MARKET SHARE
In this favorable climate, Fattorie Garofalo successfully launched a stracciatella made entirely from buffalo milk. The product is steadily gaining traction, meeting consumer expectations and sales forecasts. The company anticipates the new offering could capture up to 20% of its category’s market, building on the momentum of buffalo burrata and ricotta.
Alfio Schiatti, Fattorie Garofalo’s chief commercial officer, said: “We introduced 100% buffalo stracciatella at a time when authenticity and quality are paramount. This premium product delivers a unique texture and flavour that only buffalo milk can provide.” Schiatti also highlighted strong growth in buffalo ricotta, particularly within industrial and foodservice channels: “Buffalo milk is a key differentiator, enhancing product quality, improving yields, and delivering a distinctive taste profile. Its rapid growth underlines its commercial and sensory appeal.”
