Introducing: Frugal Feasts

This Vegetarian Meal Plan is a simple to follow, budget friendly meal plan that the whole family will absolutely love! Groceries are expensive but I’m showing you how to make 5 delicious weeknight dinners for less than $3 a serving!

I’m so excited to introduce FRUGAL FEASTS, my new BUDGET focused meal-plan series!

The idea is simple: I’ll be providing you with a meal plan of 5 weeknight dinners which will include a full customizable shopping list with the aim of keeping everything UNDER $60 or about $2.50-3/serving. 

I don’t know about you but when I make my shopping list, I usually shop on Sunday or Monday and only buy things for the work week. We typically figure out our weekend meals as it approaches. I’m hoping this will make things easier for you AND keep your grocery budgets on the minimum.

Storage Containers:

🥡 I bought a multi-pack of THESE Snapware containers (affiliate link) at Costco a year ago and we really love them. This particular 5.5 cup size is my favorite as it allows me to fit a complete serving of a meal without it being too crowded.

Meal Prep & $$ Saving Tips:

Monday: You could saute the veggies the night before so all you have to do is stuff the tortillas and top with enchilada sauce + cheese and pop in the oven. 

Tuesday: Pre-chop the broccoli and even go ahead and steam it as desired. Chop the tofu (with option to toss it in a little soy sauce to marinate in the fridge before cooking). Pre-cook rice.
To save $$: buy a bag of frozen broccoli

Wednesday: Pre-chop the cauliflower.
To save $$: make your own hummus

Thursday: Pre-measure the ingredients for the sauce.
To save $$: sometimes butterbeans are more expensive so feel free to swap them for other beans- chickpeas are great!

Friday: I buy pre-sliced mushrooms and this whole meal comes together rather quickly.
To save $$: you could leave the mushrooms out or swap for a different less expensive veggie option. Buy arborio rice in bulk.

BONUS: These are AMAZING for quickly meal prepped breakfasts.
