Grilled Fruit Kabobs

Ingredients needed

Fresh fruit – there are SO many options here for what fruit you use but I most often use watermelon, pineapple, and mango. Other great options include cantaloupe, strawberries, and kiwi!

Lime juice and zest – for a little tang.

Chili powder – tajin is also a delicious option!

Oil – to keep everything from sticking to the grill

Grilled Fruit Kabobs

These grilled fruit kabobs are so simple to make and great for summer grilling season!

Ingredients

½ pineapple peeled, cored, and cut into 1 inch cubes2 ripe mangoes peeled and cut into 1 inch pieces~3 cups of watermelon cut into 1 inch piecesJuice and zest of 1 lime1 teaspoon of chili powderOil for brushing on the skewers I used avocado oil but vegetable or olive oil would work well2 teaspoons of sea salt8-10 skewers

Instructions

If using wooden skewers, soak them in water for 15 minutes.
Make the fruit skewers by adding the fruit (about 6 pieces of fruit total each) to the skewers, alternating between the mango, pineapple, and watermelon.
Squeeze the lime juice on top of the skewers and let marinate for about 10 minutes while you heat your grill to 400 degrees F.
When ready to grill, brush both sides of the skewers with oil and place the skewers on the grill. Grill for about 3-4 minutes on each side and remove from grill to a large plate.
In a small bowl, mix together the lime zest, chili powder, and sea salt. Sprinkle over top of the skewers and ENJOY!!
