Our favorite after school snack!
I can NOT believe that it’s almost back-to-school season. I’m both excited and a little sad because I truly love summer SO MUCH!
This year, I’m preparing a little better by having snack options on hand and ready for those after school “I’m hungry!”s.
Jemma and I worked on these celery snacks together and I don’t want to brag but she told me the peanut butter butterflies are one of the best recipes I’ve ever made. I’m not sure if I should be excited she liked them so much or kind of sad because I’ve made so many other more complex things for her. haha!
Either way, she’s eating wholesome snacks and I’ll take it! Here are the 3 different versions we made:
Peanut Butter Butterflies
Yogurt and berries
Mediterranean inspired
Today I’m partnering up with Dandy using their unique 2-inch Celery Dippers™ as the base of the recipe! I love them for many reasons but largely because they’re pre-washed and ready-to-eat which makes snack time SO MUCH easier.
Plus, they allow me sneak a little extra hydration into my daughter’s diet without needing to ask her to drink water for the 10th time of the day. they’re also high in fiber and we all need a little more of that in my house!
Ingredients needed
The full written recipe is down in the recipe card but here’s what is in it:
Peanut butter + apples + pretzel sticks
Yogurt + berries + honey
Hummus + olives + tomato + feta
How to make them
I give rough measurements down in the recipe card but truthfully it all depends on your preferences and how big your celery sticks are. This is definitely a measure with your heart situation, especially when kids are involved.
For the peanut butter butterflies –
These were Jemma’s favorite because they’re so cute. Start by spreading peanut butter on a celery stick and topping it with 2 slices of apples placed in the center to look like the butterfly wings. Next add 2 small pretzel sticks (we snapped 1 in half) and place them at the top to be the antennas.
For the yogurt berry –
Top each celery stick with yogurt. Line the berries along the top and drizzle with the optional honey.
For the Mediterranean inspired –
Top each celery stick with hummus and then line the tops evenly with olives, tomato, and feta. I like to drizzle mine with balsamic glaze for a little extra flavor!
That’s it! Such a super simple and wholesome after-school snack that your kids will love!
